Ingredients
- 1 cup shredded Cheddar cheese
- 3/4 cup milk
- 1/2 cup quick cooking oats
- 1 large egg
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 small onion, finely chopped
- 1 lb ground beef
- 2/3 cup ketchup
- 1/4 cup brown sugar
- 2 teaspoons mustard
Directions
- Preheat oven to 350 degree F. Lightly grease a large baking dish.
- Mix together cheese, milk, quick cooking oats, eggs, salt, pepper, onion, and ground beef in a bowl. Using your hands, or a large spoon, scoop and shape 8 mini meatloaves. Place meatloaves in the prepared baking dish, making sure there is space between each loaf.
- In a separate bowl, stir together the ketchup, brown sugar, and mustard. Mix it well. Top the uncooked meatloaves with the sauce evenly. In a pinch I have used barbecue sauce instead, and it was a hit!
- Bake uncovered in the over for 45 minutes. Test cooked meat with a meat thermometer, it should read 160 degrees F when cooked through.
