The Best White Chicken Chili

Ingredients:

  • 1 yellow onion, diced
  • 2 tbsp avocado oil (or any oil you like cooking with)
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • salt and pepper to taste
  • 1 (80z) pkg Neufchatel cheese
  • 1 1/2 cups corn
  • 2 can cannellini beans
  • 2 1/2 cups shredded chicken
  • Toppings of your choice, ie: fresh lime juice, cilantro, tortilla chips, avocado, extra cheese, etc.

Instructions:

  1. Heat oil in a large pot over medium high heat. Add onion and sauté until slightly clear. Add garlic, and sauté for 1 more minute.
  2. Add broth, green chilies, and spices. Bring the mixture to a boil then reduce to a simmer, and let it simmer for 15 minutes.
  3. Drain and rinse beans, then toss them into the soup.
  4. Cut Neufchatel cheese into small blocks, then add it to the soup along with the corn and chicken. Let simmer for 5-10 minutes.
  5. Top with desired toppings.
